In February 2014, the Government confirmed that in September 2014, all schools would be required to provide universal free meals for all Reception and Key Stage 1 children. As a head teacher of a one form entry school, in Aldridge, that left me with a dilemma, on many fronts:

I needed to provide a nutritious, value for money meal to all children in my school, in line with changes to statutory law.
I also needed to create an efficient, small working kitchen with limited space available, where meals could be cooked on premises, in keeping with the findings from parents’ questionnaires.
I also needed to appoint and train suitable staff to run and maintain the kitchen on behalf of the school.

All of this on a shoe string budget in approximately 4 months – that’s when I heard of Mike.

I had several options, including enlisting support from very well established catering companies, but, myself and the Governors, after much discussion, decided to speak with Mike at Unity Catering.
It became very apparent, after reading Mike’s paperwork and speaking with him both personally and at Governing body level, that he was the person we needed because:

his consultancy business offered value for money, whilst maintaining a sufficiently close level of supervision to enable me to delegate responsibility to him.
he also had a first class track record of experience of both managing and overseeing successful catering ventures.
he also offered a calm, bespoke confident package, which delivered every step of the way.
his professional, thorough “no nonsense” attitude to the venture, was a huge relief to a busy head teacher with limited knowledge of food hygiene or catering requirements.
his sense of humour was a welcome bonus in the face of an uphill challenge.

In September 2014, the kitchen was ready- it opened one week after the start of the new school year- exactly as we had planned. It now serves a minimum of 110 meals daily and this, we know, will continue to grow as the new academic year unfolds. It is a hub of activity which has become an asset to our school.

Here are some of the many areas Unity Catering supported us with.
Mike was able to:
• offer recommended suppliers
• oversee and support delivery of and installation of the kitchen, planned to his specification, within the space available
• organise the appointment and induction of new catering staff.
• arrange and deliver level 2 food hygiene,
• monitor and organise regular check up visits,
• set up nutritious menus to launch the kitchens and advise on all food and hygiene levels
• order and resource the kitchen, on a very tight budget, effectively
• implement changes to statutory law, in December 2014 in line with the 12 food allergens

His ability as a chef was also clearly visible when he assisted and coached in the early stages of food
service- thus presenting him to the kitchen staff as an excellent role model

Why Mike and Unity Catering- why not someone else?
1. Mike is great to have around school- he is professional with staff, respectful and patient around children, always supportive, whilst challenging people under his jurisdiction to improve and better the delivery in place- something I strongly admire.
2. He is able to communicate on many levels- from sharing complex systems to delivering simple, well expressed explanations to novices; from delivering to a group of Governors to putting people at their ease during interview.
3. His recommendations and early advice proved to be excellent- school received the highest recommendation from Environmental Health when they visited the kitchen premises, to ensure good practice. His layout of the kitchens was commented on as highly efficient and an excellent use of space for the users.
4. Children and visiting parents have openly valued and supported the various menus and recipes recommended and prepared by Mike- he continues to support their evolving amendments, in line with the needs and preferences of our children in our school.
5. Costings and estimations proved to be accurate and thorough.
6. Advice given to Governors instilled confidence- his personal approach and openness invited candid questioning and allayed fears.
In short, to summarise the venture, Mike made what seemed like the impossible, possible! He gave concrete advice and support in a calm and efficient manner. He has always offered a “Plan B” when a crisis is brewing. For example, when the school freezer tripped, Mike was on hand, quickly, to support and within 24hrs, had secured a temporary freezer for our use. He also supported the cooks in making safe the frozen goods and reducing the cost implications to the school. The school was unaffected and the service to children was delivered on time.
I would recommend Mike, unreservedly, as an expert in his field, a supportive colleague, a level headed business man and a much respected member of our team. My only reservation is that he openly supports “Villa”- something we intend to work on in the future!

Having made the decision to manage our own school catering we were looking for a different type of support.  This support had to allow us as much input as possible whilst ensuring we delivered an exciting and nutritious menu for our pupils, meeting all of our legal requirements.

A lot of the other providers in the market wanted to take complete control of our kitchen, its staff and finances, and this is something we were keen to resist as we felt we could not have the level of involvement we wanted.  Then we discussed our requirements with Unity Catering and realised that we could have what we wanted for a very competitive price.

Unity came to see us, reviewed our staff, the skills, the menus, our procurement and the finances, resulting in the transition to managing our own catering seamless.  Unity set up everything for us and either reduced costs, improved standards or both.  It was a great decision for our school and I look forward to working with Unity Catering in the future.

We chose Unity to provide an external audit of our Catering provision following taking the catering in house to School. Mike visited the School for a day and provided a professional service, producing a report and any recommendations that could be used for both School and to provide to our Governors. We will be booking this Audit on an annual basis.

Having taken the decision to bring our school meals provision ‘In-House’ we decided that we wanted to take full control.  However, we looked at a lot of the leading providers in the market and they wanted to take a lot of the control away from us.  Unity Catering were then recommended.  After speaking to Mike King it quickly became apparent that he was able to offer us the comprehensive support, advice and guidance we sought while allowing us to take control of the day to day operation of the school canteen.

He has provided us with invaluable guidance and support from the initial planning of the kitchen, employment of a school chef and transfer of existing staff from the local authority to donning his hat and apron in any time of need!

Mike continues to support the school in a professional and friendly manner and I would not hesitate in recommending Unity Catering to any school that is looking to pursue bringing school meals in-house.

Mike has a warm and professional relationship with the Head Teacher, Accountant and kitchen staff at Greenholm. When we contact him, he is always swift to respond, and is careful to understand our requirements and questions. We find him to be a reliable and trusted adviser to the school as regards the catering operation. Mike understands our school catering objectives and his input is helping us achieve our aims in terms of the quality and choice of the food offering at school.

Budget support

Mike’s support with preparing the catering part of our budget for the next academic year has been invaluable. It covers as much detail as we require, and is presented in a logical format which is easy to understand.

Capital purchases

Mike has negotiated with different suppliers about their proposals for updating some of the capital equipment in our kitchen. He presented his findings and comparisons in a way which assisted our Finance Committee in deciding upon a preferred supplier. Mike also negotiated with each supplier to obtain added value on our behalf – by reducing costs and successfully negotiating additional equipment from the suppliers.

Food prices

Mike negotiates with our food suppliers on our behalf. We recently conducted a review of the food prices he secures in competition with a large local authority procurement service, and it was proved that Mike obtains prices which are more competitive than the procurement service in the main. Where he cannot get supplies cheaper he was already matching the prices obtained by the Procurement specialists.

We have worked with Unity Catering for 2 years and during this time Mike King has provided excellent support to us in managing our in-house catering provision.


Mike effectively guided our transition to in-house catering; supporting the school in areas such as HR, procurement, budgeting, training and menu planning. He took an essential part in preparing the kitchen staff for the transition, managing their concerns and expectations as well as patiently answering all my questions.


Mike is personable, professional, flexible, calm and very competent in his field. He has the ability to give guidance without imposing specific viewpoints, and has supported us well through some HR and recruitment difficulties. Mike is very willing to assist with recruitment, training and performance management and has successfully trained several members of staff to achieve Level 2 Food Hygiene certificates.


Mike has built up a good relationship with the kitchen staff and has enabled an increase in skills and confidence. He visits school on average once per fortnight and is happy to visit on request to meet the needs of the school.


The quality of food served at school has improved over the last 2 years and Mike strives to ensure high standards in every area of kitchen management. He encourages theme days and offers guidance on food presentation and service.


We have plans to modernise and upgrade our kitchen facilities; Unity Catering has a variety of contacts within kitchen design/maintenance/equipment suppliers and is therefore able to support the procurement process by organising several quotations.

 

Mike has the ability to facilitate this whilst maintaining a professional and independent approach.


Our first full financial year 2016/17 of in-house catering has successfully stayed on budget. Unity Catering secures significant discounts for us with major food suppliers and is constantly looking for ways to make savings on our behalf. He is very diligent in checking prices and ensuring we are receiving discounted prices.


Unity Catering has enabled us to take full control of our kitchen and employ our own kitchen staff under the caring expertise of a catering consultancy. I believe that Unity Catering offers excellent value for money and have no hesitation in recommending their services.
